We asked Jeff for his favorite snack, and true to character, therein this story:
I lived and worked in Hollywood for 12 years. Somewhere in that time, I must have sold something, because I went to a very pricey and trendy bar and restaurant in Beverly Hills. I don’t remember the name, but it had a waterfall cascading down the wall behind the bar. That’s why I went there. They also made a good Margarita – a real Margarita – and that was my kick at the time.Their bar menu included a delightful gnosh that went perfectly with the drink, and I re-created the recipe by taste. This is it: I call it,
Hilary’s Cocktail Taco Ingredients: Four white flour tortillas One cup white seedless grapes One wheel of Brie cheese
Thin-slice half a wheel of Brie cheese.Take one cup of white seedless grapes and cut them all in half, length-wise.Heat a medium, shallow frying pan to medium heat. Pour in just enough extra virgin olive oil to cover the bottom of the pan. Drop one tortilla into pan, and put a line of Brie slices down the middle. Add a row of half-grapes on top.Fold the tortilla in half. When the Brie starts to melt, flip over the tortilla. I like to cook until the tortilla is golden brown and the Brie is runny. If you prefer it non-crunchy, fine.Makes 3-4 Tacos.Additionally, if you feel experimental, you can sprinkle a dash of nutmeg over the grapes before you fold the tortilla. And of course, a Margarita helps it all go down…Skaal!
